A natural sweetener that dates back to the ancient Egyptians, barley malt extract is produced from sprouted (malted) barley in a variation of the same process that produces beer. Like other unrefined sweeteners, it has a higher concentration of vitamins and minerals, and is also a decent source of protein. Barley malt has a dark, viscous consistency however its taste is delicate and sweet and is ideal for baking, glazing and adding to sauces.
